Holly Hobbie's Vegan Brownies

You will need
  • 3 bananas
  • 150ml almond/oat/coconut/soya milk
  • 150ml olive oil
  • 1tsp vanilla extract
  • A pinch of salt
  • 300g plain flour
  • 1tsp baking powder
  • 150g sugar
  • 80g cocoa powder
  • 110g vegan chocolate

When I got home, Heather and Robbie had made me some seriously good brownies. I grabbed the recipe and made some vegan improvements for you. I know my dad usually uses eggs, but I'm trying to be more climate-conscious. If you are too, you'll love these plant-based brownies! Plant power!

Each batch makes 12 brownies, 1 brownie per serving.

Step One

Get a grown-up and preheat the oven to 180C, and line a baking tin with baking paper.

Step Two

Mash the bananas using a fork, it should become a gooey bananary mush!

Step Three

In a large mixing bowl, add the mashed bananas, vegan-friendly milk of your choice, olive oil, vanilla extract, salt, and then mix.

Step Four

Next add all the dry ingredients including flour, baking powder, sugar, and cocoa powder. Then pour the chocolatey gooey mixture into your lined baking tray and add your vegan chocolate chips.

Step Five

GRAB A GROWN-UP! This next bit is HOT.

Place your brownies in the oven and bake for around 30 - 40 minutes. Allow the brownies to cool completely on a wire cooling rack, before cutting into squares.
