A classic vinaigrette dressing isn't hard to make - just put everything in a jam jar and shake. But getting the balance right is everything.

  1. Put all the ingredients into a clean jar with a secure lid. Shake well to emulsify the dressing and serve. If the dressing separates, just give it another shake.

  2. Add a crushed clove of garlic or 1 tbsp fresh herbs for variety.
