These salted cucumbers are great for sandwiches and salads.

Ingredients

Method

  1. Put the garlic, horseradish and horseradish leaves in the bottom of a large sterilised jar and add the cucumbers.

  2. Add the salt to 2 litres/3½ pints water and mix thoroughly. Pour the salted water over the cucumbers, screw on the lid and leave to rest for 24 hours.

  3. The cucumbers will keep in the fridge for one month.
