Whole Roast Cauliflower
Try Mum's amazing recipe for a whole roast cauliflower for yourself! It will put a unique twist on a roast dinner classic! And no... it isn’t an alien, thanks Dad!

You will need
- 1 whole cauliflower, leaves removed, the bottom should be trimmed and core/stem removed so the whole cauliflower stand straight up
- 2cm of fresh ginger, peeled and chopped
- 2 garlic cloves, peeled and chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp sumac
- ½ tsp turmeric
- ½ tsp ground cinnamon
- 150g unsalted butter, softened
STEPS
Pre-heat the oven to 160C.
Put the prepared cauliflower onto a lined baking sheet.
Place the ginger, garlic and spices into a food processor and blend to a paste, then add the butter and blend.
Spread/smear the butter over the whole of the cauliflower and place in the oven for 40-50 minutes.
TO SERVE
Remove the cauliflower from the oven and place on a serving board, plate or platter.
Spoon the yoghurt over the top and garnish with the pomegranate seeds and fresh parsley.
